When I was a wee one, my Grandma Willie would plop me on the kitchen counter and share with me her love for cooking Southern Delta Cuisine. I would watch for hours on end as she would create dishes one after the other, along the way asking me to try this and try that, grab this, stir that… it’s my first memory of cooking… my first memory of food!

I have had the opportunity of learning from the ground up in the culinary industry… from washing dishes to executive chef/owner. I’ve worked and trained with some of the finest chefs in the world throughout my tenure. One of the highlights of my career thus far was when I traveled the world with the Le Mans Race Car Series for 5 years, cooking with and learning from 15 international chefs, some of whom later went on to culinary prominence.

Many culinary adventures later I found myself in Asheville, NC. For the past 15 years I have been an active voice and participant in the food scene that is Asheville. I have owned and operated two restaurants and have been with HomeGrown Restaurants and Catering for the past 8 years where I am COO. HomeGrown was one of the first restaurants to adopt the Farm to Table concept and continues to be at the forefront of the movement. We have been voted consistently the Best Local Food Emphasis Restaurant, Best Green/ Sustainability Friendly Restaurant, Best Local Homestyle/ Diner, Best Fried Chicken and Restaurant That Best Represents the Spirit of Asheville.

While I continue to oversee the operations of HomeGrown, I have found myself wanting to “get back” to an intimate relationship between myself, food and the smaller community. I miss small intimate occasions and those connections where I can create and share all the recipes and dishes I have learned over the years.

My primary focus is all things LOCAL & SUSTAINABLE. I work on a daily basis with over 20 local farmers to procure the best local product possible. Each menu that I have created for you is local (centric). When unable to attain a product locally, I will source responsibly from regional farms. I have listed for you all of the farmers that have contributed to your menu selection at the top of the menu pages… I hope you have a chance to visit a few of these folks at our local farmer’s markets. 🙂

If my mama was there I would have slapped her!

**Shrimp & Grits with Crawfish chowder***

This chowder proved that my life was a sham and everything I had known about soups was falsehoods and tall tales! THIS clearly is what chowder is supposed to taste like! Before I could even get the spoon to my mouth, my nose took in one good whiff of aroma and said “yup, this is about to be good.” My mouth closed around the spoon, FULL of crawfish, shrimp, corn, potatoes, and creamy broth. I INSTANTLY started looking around the room, hoping my mama would show up! This chowder was divine! Perfect conistently, and fulled to the brim with seafood! It was a situation of “I want to slow down to savor this, but it’s so good that my mouth would completely shut down forever if I stopped now.” It might not have seemed like it, and I hope she caught it, but I swear I was saying “Chef Terri this is the best I’ve ever tasted.” It may have been inaudible because I couldn’t take the risk of stopping long enough to get a full audible sentence out.

Then the Shrimp and Grits entree…Not being a big grits person, I wasn’t looking forward to this as much as the chowder. But Chef Terri! This was no normal Shrimp and Grits! First of all, the shrimp were large and PERFECTLY cooked. There was shrimp, there was onion, there was a gravy that was succulent, and decadent. The grits were creamy, and hearty.

Chef Terri is the BEST! Her attitude and personality fit in perfectly with our group, and we just adored her! I look forward to working with her again. She’s reason enough to come back to Asheville!

We absolutely loved Chef Terri and our experience with her. The Crawfish Chowder and Key Lime Pie were out of this world. We highly recommend her to everyone looking for a special night in Asheville. We will definitely check out your chefs in Charleston!
