My Name is Michael and I have been in the culinary and foodservice Industry since 1991. I am a Certified Dietary manager & Certified Food Protection Professional as well as being Servsafe certified and a Graduate of the Culinary Institute of America with an Associates Degree in Culinary Arts. My Experience mainly stems from working in upscale Restaurants and Hotels like the Fontainebleu in Miami Beach. I also have many years experience with Modifying menu items tailoring to the needs of clients to altered diets including low sodium diets, low concentrated sweets, diabetic meals, therapeutic diets, gluten free meals, vegetarian and most importantly everything from scratch. Some of my biggest strengths are various cuisines, comfort foods and all types of cooking methods and techniques.
